Delicious oatmeal cookies with plump raisins are perfect for snacking or packing in lunches.
Ingredients:
  • 14 tablespoons butter, softened
  • 0.75 cup firmly packed brown sugar
  • 0.5 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1.5 cups all-purpose flour
  • 3 cups Quaker® Oats (Quick or Old Fashioned, uncooked)
  • 1 cup raisins
Instructions:
  • Preheat oven to 350°F.
  • In a large bowl, cream together butter and sugars until creamy using an electric mixer on medium speed. Then, add eggs and vanilla, and beat until well combined.
  • Mix the flour, baking soda, cinnamon, and salt together until well combined.
  • Combine the oats and raisins until thoroughly mixed.
  • Scoop dough using a rounded tablespoon onto non-stick cookie sheets.
  • Bake until light golden brown, about 8 to 10 minutes.
  • Allow the cookies to cool on the baking sheets for 1 minute, then transfer them to a wire rack to cool completely. Store in an airtight container.
