Vareniki: Vegetarian dumplings filled with potatoes, onion, and savory fried mushrooms.
Ingredients:
  • 18 ounces potatoes
  • salt and freshly ground black pepper
  • 0.25 cup sour cream
  • 0.5 teaspoon baking soda
  • 0.5 cup water
  • 0.25 cup butter
  • 2 onions, finely diced
  • 3.5 cups finely chopped button mushrooms
Instructions:
  • In a large pot, simmer potatoes in salted water until tender, about 25 minutes. Drain and mash the potatoes; season with salt and pepper to taste.
  • While the potatoes are cooking, mix together the flour and 1 teaspoon of salt in a large bowl. In a separate bowl, combine the sour cream and baking soda. Add water to the flour mixture and mix, then incorporate the sour cream mixture. Knead until a smooth dough forms, then cover with plastic wrap and refrigerate for 10 to 15 minutes.
  • In a skillet over medium heat, melt butter and caramelize onions for 5 to 10 minutes. Then, sauté mushrooms until browned for about 5 minutes. Combine with mashed potatoes.
  • Divide dough into 4 portions and shape each into a 1 1/2-inch thick rope. Cut ropes into small 1/2-inch pieces. Flatten each piece into a circle, fill with 1 teaspoon of potato filling, fold into a half-moon, and seal the edges.
  • 1. Bring a large pot of salted water to a gentle boil. Cook the vareniki in batches until they float to the surface, approximately 3 minutes. Continue cooking for an additional 2 to 3 minutes. Use a slotted spoon to transfer them to a colander for draining.
