Veal Chops with Caramelized Onions

Broiled veal chops with a sweet and savory topping evoke cozy, romantic dining in a rustic setting - all from the comfort of your own home!
Ingredients:
  • 3 cups sliced red onions (2 medium)
  • 1/4 cup water
  • 1/4 cup packed brown sugar
  • 1/4 cup golden raisins
  • 1/2 cup white wine or apple juice
  • 1/3 cup white wine vinegar or white vinegar
  • 1 teaspoon ground sage
  • 1 teaspoon olive or vegetable oil
  • 1/4 teaspoon pepper
  • 1/8 teaspoon ground red pepper (cayenne)
  • 6 veal loin or rib chops, 1/2 inch thick (3 lb)
Instructions:
  • Start by placing onions and water in a 2-quart saucepan. Cook covered over medium heat for 5 minutes. Stir in all remaining ingredients except veal chops, then reduce the heat to medium-low. Cover and cook for about 50 minutes, stirring occasionally until thickened.
  • Preheat broiler. Grease broiler pan rack. Trim fat from veal chops. Arrange veal on rack in broiler pan and broil 4 minutes; then flip and broil for another 4-6 minutes until medium-rare. Top veal with onion mixture before serving.
