Make kid-friendly veal parmesan with ease!
Ingredients:
  • Olive oil cooking spray
  • 9.20 gm olive oil
  • 1 small brown onion, finely chopped
  • 1 small carrot, peeled, grated
  • 1 small zucchini, trimmed, grated
  • 44.40 gm no-added-salt tomato paste
  • Mutti Polpa Finely Chopped Tomatoes 400g
  • 4 (125g each) veal schnitzels (uncrumbed)
  • 125.00 ml grated reduced-fat pizza cheese
  • Mashed potato, to serve
  • Baby spinach, to serve
Instructions:
  • In a saucepan over medium heat, heat oil. Add onion, carrot, and zucchini. Cook for 6-7 minutes until onion softens. Stir in tomato paste for 1 minute. Add tomato and 1/2 cup water. Bring to a boil, then simmer on low for 10 minutes until thickened. Stir occasionally.
  • Spritz a spacious non-stick pan with oil and heat over high flame. Sear veal in batches for 2 minutes on each side until beautifully golden and perfectly cooked.
  • Preheat the grill on high. Spread two-thirds of the tomato mixture at the base of a 6-cup oval baking dish that is 6cm deep. Arrange the veal in a single layer over the mixture. Pour the rest of the tomato mixture over the veal. Top with cheese. Grill for 5 minutes until the cheese is melted and golden. Serve with mashed potatoes and spinach.
