Succulent veal cooked with savory ham and fragrant sage, creating a mouthwatering dish.
Ingredients:
  • 100g shaved ham
  • 30g butter
  • 750g veal steak
  • 12 sage leaves
  • 6 potatoes, peeled, diced and par-cooked
  • Baby mesclun salad, to serve
  • Lemon wedges, to serve
Instructions:
  • Flatten each veal piece between parchment paper until thin. Cut in half crosswise to yield 12 pieces. Place a sage leaf and a slice of shaved ham on each piece.
  • In a large frying pan over medium heat, melt butter with oil. Fry the par-cooked potatoes for 5 minutes, tossing regularly, until golden and crisp. Drain the potatoes on paper towels.
  • Preheat frying pan over medium heat. Sear veal, ham side down, for 1 minute. Flip and cook for an additional minute or until desired doneness. Plate alongside potatoes, mesclun salad, and lemon wedges.
