Ingredients:
  • 4 x 100g veal schnitzel cuts
  • olive oil spray
  • Salt and pepper to season
  • 18.20 gm olive oil
  • 1 clove garlic, crushed
  • 180ml white wine
  • 125ml chicken stock
  • 250g button mushrooms, sliced
  • 20.00 ml chopped flat-leaf parsley
  • 2 green onions, sliced
Instructions:
  • Coat veal with olive oil spray and season with salt and pepper. Sear veal in a hot non-stick frying pan in batches for 2-3 minutes per side until golden brown. Rest covered with foil to keep warm.
  • In the same pan, combine olive oil and garlic over medium heat for 2 minutes. Pour in wine and stock, then increase heat and simmer vigorously for 3-4 minutes until reduced.
  • Cook mushrooms for 3-4 minutes, then toss veal in sauce for 1 minute. Serve with mushroom sauce, parsley, and green onion.
