Create a vibrant vegan vegetable soup using fresh farmers market produce and herbs like basil, tarragon, and carrot tops.
Ingredients:
  • 2 tablespoons coconut oil
  • 2 cups chopped carrots
  • 3 stalks celery with leaves, chopped
  • 1 white onion, sliced
  • 3 cloves garlic, minced
  • 3 whole star anise pods
  • 6.3333334922791 cups vegetable broth
  • 0.5 cup stemmed and chopped carrot tops
  • 0.25 cup chopped fresh basil
  • 1 tablespoon chopped fresh tarragon
  • 1 pinch salt and ground black pepper to taste
Instructions:
  • In a large pot over medium heat, cook carrots, celery, onion, garlic, and star anise in coconut oil until onion is translucent, about 5 to 7 minutes. Bring to a boil after pouring in vegetable broth.
  • Combine the vibrant flavors of carrot tops, basil, and tarragon in the pot and simmer until beautifully wilted, approximately 5 minutes. Season with salt and pepper to taste. Remember to remove the star anise before serving to guests.
