Vegan Italian Christmas cookies with anise, brown sugar, and almond butter twist.
Ingredients:
  • 1 tablespoon ground flax meal
  • 3 tablespoons water
  • 2.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground anise seeds
  • 0.5 cup almond butter
  • 0.33333334326744 cup brown sugar
  • 2 teaspoons anise extract
  • 2 tablespoons confectioners' sugar
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and get your baking sheets ready with a cozy layer of parchment paper.
  • Combine ground flaxseed and water in a bowl and allow it to thicken for about 10 minutes.
  • In a bowl, whisk together flour, baking powder, and ground anise seeds until blended. Stir in flax mixture, almond butter, brown sugar, and anise extract until a soft dough forms. Shape into 2-inch balls and gently flatten with your hand on baking sheets.
  • Bake in the preheated oven for 20 to 25 minutes until the bottom is lightly golden, then dust with confectioners' sugar.
