Vegan Pasta with Creamy Miso Cashew Sauce

Quick and flavorful vegan miso pasta sauce made in 20 minutes using a high-speed blender.
Ingredients:
  • 1 pound penne pasta
  • 1 cup unsalted cashews
  • 1 tablespoon Miso Paste-Mellow White MO
  • 3 cloves garlic, peeled
  • 2 cups hot water
Instructions:
  • 1. Boil a large pot of lightly salted water. Cook penne until al dente, stirring occasionally, for about 11 minutes. Drain the pasta and set it aside.
  • In a high-speed blender like a Vitamix®, blend cashews, miso paste, garlic, and hot water on high speed for 6 to 8 minutes until smooth and steaming. Pour the creamy sauce over pasta and it will thicken as it cools. Enjoy!
