Vegan Potato Soy Chorizo Tacos

Vegan Mexican tacos with mashed potatoes and soy chorizo for a delicious twist on a classic recipe.
Ingredients:
  • 2 pounds Yukon Gold potatoes, peeled
  • salt and ground black pepper to taste
  • 2 tablespoons vegetable oil, divided
  • 12 ounces soy chorizo, crumbled
  • 12 (6 inch) corn tortillas
Instructions:
  • In a large pot, generously season water with salt and add potatoes. Bring to a boil and simmer covered until potatoes are fork-tender, around 30 minutes. Reserve 1 cup of the cooking water before draining.
  • Place the boiled potatoes in a bowl and generously season with salt and pepper. Use a potato masher to mash the potatoes, gradually adding reserved cooking water until you achieve your preferred thickness.
  • In a large skillet, heat 1 tablespoon of oil. Sauté the soy chorizo for 5 minutes. Stir in the mashed potatoes until combined.
  • Warm tortillas on a hot griddle until soft. Fill each with potato-chorizo mixture equally. Fold in half, brush the outside with 1 tablespoon oil, and cook on the griddle until crispy, turning once, for 3 to 5 minutes.
