Vegan Quinoa Chili

Hearty vegan chili with red pepper, jalapeno, beans, and protein-packed quinoa.
Ingredients:
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 carrots, chopped
  • 1 red bell pepper, chopped
  • 1 jalapeno pepper, seeded and chopped
  • 4 cloves garlic, chopped
  • 2 (28 ounce) cans tomatoes
  • 2 (15 ounce) cans black beans
  • 2 (15 ounce) cans chickpeas
  • 1 cup quinoa
  • 2 teaspoons chili powder
Instructions:
  • In a large saucepan over medium heat, sauté onion, carrots, red bell pepper, and jalapeno pepper in olive oil until tender, about 5 minutes. Stir in garlic and cook until fragrant, about 2 minutes. Add tomatoes, black beans, chickpeas, quinoa, garlic salt, chili powder, and cumin. Simmer on low heat until quinoa is tender and chili is heated through, 30 minutes to 1 hour.
