Satisfying vegan shepherd's pie made with plant-based meat and dairy-free cheese for a comforting casserole.
Ingredients:
  • 5 russet potatoes, peeled and cut into 1-inch cubes
  • 0.5 cup vegan mayonnaise
  • 0.5 cup soy milk
  • 0.25 cup olive oil
  • 3 tablespoons vegan cream cheese substitute (such as Tofutti ®)
  • 2 teaspoons salt
  • 1 large yellow onion, chopped
  • 2 carrots, chopped
  • 3 stalks celery, chopped
  • 0.5 cup frozen peas
  • 1 tomato, chopped
  • 1 teaspoon Italian seasoning
  • 1 clove garlic, minced, or more to taste
  • 1 pinch ground black pepper to taste
  • 1 (14 ounce) package vegetarian ground beef substitute
  • 0.5 cup shredded Cheddar-style soy cheese
Instructions:
  • In a pot, add potatoes and cover with cold water. Bring to a boil over medium-high heat. Reduce heat to medium-low and simmer until potatoes are tender, around 25 minutes. Drain the potatoes.
  • Combine vegan mayonnaise, soy milk, olive oil, vegan cream cheese, and salt into the potatoes, then use a potato masher to blend until creamy and airy. Keep the mashed potatoes to the side for later.
  • Preheat the oven to 400°F (200°C) and generously coat a 2-quart baking dish with cooking spray.
  • In a large skillet over medium heat, sauté onion, carrots, celery, frozen peas, and tomato in vegetable oil until softened, about 10 minutes. Add Italian seasoning, garlic, and pepper, and stir well.
  • Lower the heat to medium-low and add the vegetarian ground beef substitute to the skillet with the vegetables. Stir and cook until the mixture is heated through, for about 5 minutes, making sure to break up the meat substitute as it cooks.
  • Evenly layer the vegetarian meat substitute mixture at the bottom of the baking dish, top it with the prepared mashed potatoes, and smooth them into a uniform layer. Sprinkle shredded soy cheese on top of the potatoes.
  • Bake in the warm oven until the cheese is gooey and golden, and the casserole is heated through, around 20 minutes.
