Southern-style vegan peach cobbler with sweet biscuit crust for a modern twist on a classic dessert.
Ingredients:
  • cooking spray
  • 0.66666668653488 cup almond milk
  • 1 teaspoon apple cider vinegar
  • 0.5 cup vegan margarine (such as Earth Balance®), softened
  • 2 cups all-purpose flour
  • 6 cups fresh peaches - peeled, pitted, and sliced
  • 0.25 cup brown sugar
  • 0.25 cup white sugar
  • 1 tablespoon cornstarch
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and generously coat a 9-inch square baking pan with nonstick cooking spray.
  • Mix almond milk and vinegar in a small bowl and allow it to sit for 5 minutes.
  • In a large bowl, use an electric mixer to blend margarine and 2 tablespoons of white sugar until creamy. Add flour and baking powder; use a fork or pastry blender to mix until it looks like coarse crumbs. Stir in milk mixture and vanilla extract until just combined. Set aside your biscuit batter.
  • Toss peaches with brown sugar, 1/4 cup white sugar, cornstarch, and cinnamon until well coated. Spread peaches evenly in the pan and cover with biscuit batter.
  • Place the biscuits in the preheated oven and bake until the tops are beautifully golden brown, for about 40 to 45 minutes. Serve them while warm and enjoy!
