Colorful veggies coated in vegan batter, deep-fried to crispy perfection - easy tempura delight.
Ingredients:
  • ice cubes
  • 2 tablespoons arrowroot powder
  • 1 cup ice water
  • vegetable oil for frying
  • 1 small head cauliflower, cut into bite-size pieces
  • 1 small head broccoli, cut into bite-size pieces
  • 1 small red bell pepper, cut into bite-size pieces
  • 10 baby carrots
Instructions:
  • 1. Place ice cubes in a large bowl to chill. In a small bowl, combine flour and arrowroot powder. Rest the small bowl over the ice. Slowly add ice water to the flour mixture, stirring until the batter reaches a medium-thick consistency.
  • In a deep-fryer or large saucepan over medium-high heat, warm up the oil. Coat cauliflower in the batter and fry until golden, about 1 to 2 minutes. Drain on paper towels to remove excess oil. Follow the same process for broccoli, red bell pepper, and baby carrots.
