Vegan Zucchini Banana Bread

Deliciously moist zucchini banana bread, free of dairy, eggs, and nuts.
Ingredients:
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 tablespoon ground cinnamon
  • 2 ripe bananas
  • 0.5 cup applesauce
  • 0.5 cup vegetable oil
  • 1.25 cups brown sugar
  • 1 tablespoon lemon juice
  • 3.5 cups grated zucchini
Instructions:
  • Preheat the oven to 325 degrees F (165 degrees C) and generously grease two 8x4-inch loaf pans.
  • Combine the flour, salt, baking soda, baking powder, and cinnamon by sifting them in a large bowl.
  • In a large bowl, combine mashed bananas, applesauce, vegetable oil, brown sugar, white sugar, vanilla extract, and lemon juice. Mix in the flour mixture, fold in the grated zucchini, and pour the batter into the prepared loaf pans.
  • Bake in the preheated oven for 60-90 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 20 minutes before transferring to a wire rack to cool completely.
