Nutrient-packed veggies swim in a bowl of zesty tomato soup for a cozy and nourishing meal.
Ingredients:
  • 1 x 400g pkt Fresh Veggie Mix
  • 1 x 800g can diced Italian tomatoes
  • 1.25L (5 cups) water
  • 145g (1 cup) dried macaroni pasta
  • Shaved parmesan, to serve
Instructions:
  • In a large saucepan over medium heat, gently heat the oil. Add the vegetable mixture and cook, stirring occasionally, for about 3 minutes until the leek starts to soften.
  • Combine the tomato and water in a pot and bring it to a boil. Add the pasta and bring it back to a boil. Reduce heat to medium and simmer for 15 minutes, or until pasta is al dente. Season with salt and pepper to taste.
  • Serve the soup in individual bowls and garnish with shaved Parmesan before serving.
