Vibrant vegetarian biryani bursting with tender veggies, aromatic rice, and traditional Indian seasonings.
Ingredients:
  • 2 cups long-grain white rice
  • 3 tablespoons vegetable oil
  • 1 large onion, thinly sliced
  • 0.5 teaspoon cumin seeds
  • 2 bay leaves, broken in half
  • 2 potatoes, quartered
  • 2 carrots, quartered
  • 1.5 teaspoons ground turmeric
  • 1 teaspoon chile powder, or more to taste
  • 0.5 teaspoon ground coriander
  • 2.5 cups water
  • 1 cup shelled peas
  • 1.5 teaspoons salt, or to taste
  • 1 teaspoon butter
  • 0.5 teaspoon garam masala
Instructions:
  • In a large container, submerge the rice in cool water, allowing it to soak for 20 minutes. Then, drain the rice.
  • In a pressure cooker over medium heat, sauté onion, cumin seeds, and bay leaves until onion is translucent, about 5 minutes. Add potatoes and carrots; cook until lightly browned, about 5 minutes. Stir in turmeric, chile powder, and coriander; cook until fragrant, about 1 minute.
  • Gently coat rice with oil in the pressure cooker. Add water, peas, salt, butter, and garam masala. Seal and bring to high pressure per manufacturer's instructions. Cook for 5 minutes, then remove from heat.
  • Allow pressure to release naturally as per manufacturer's guidelines, then use a fork to fluff the rice.
