Vegetable noodle salad

Whip up this simple Asian noodle salad for a crowd-pleasing dish at your dinner party.
Ingredients:
  • 350g packet fresh Singapore noodles
  • 120g snow peas, trimmed, halved
  • 250.00 ml beansprouts, trimmed
  • 1 medium carrot, grated
  • 50g baby spinach
  • 9.00 gm sesame seeds, toasted
  • 42.00 gm salt-reduced soy sauce
  • 1 tsp sesame oil
Instructions:
  • In a heatproof bowl, combine noodles and snow peas, then pour boiling water over them. Let sit for 4 to 5 minutes until tender. Use a fork to separate the noodles, then drain and rinse under cold water before returning to the bowl.
  • Combine beansprouts, carrot, spinach, and sesame seeds with the noodle mixture. Drizzle with a mixture of soy sauce and oil, then toss everything together before serving.
