Summer vegetable saute with zucchini, carrots, red onion, garlic, balsamic vinegar, and fresh lemon juice - a flavorful side dish for any meal.
Ingredients:
  • 1 cup orzo pasta
  • 2 tablespoons extra virgin olive oil
  • 0.5 red onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chopped carrot
  • 1 small zucchini, quartered and sliced
  • 2 tablespoons balsamic vinegar
Instructions:
  • Bring a generous pot of lightly salted water to a boil, then add orzo. Cook until al dente, for about 8 to 10 minutes. Drain and set aside.
  • Heat olive oil in a large skillet over medium heat. Add onion, garlic, and carrot, sauté for 2 minutes. Add zucchini, cook for 2 more minutes. Deglaze with 1 tablespoon balsamic vinegar. Season with salt and pepper. Stir in orzo, remaining 1 tablespoon balsamic vinegar, and lemon juice. Reduce heat to medium low.
