Vegetable salad with warm dressing

Ingredients:
  • 360g broccoli, cut into florets
  • 300g cabbage, finely shredded
  • 280g (1 bulb) kohlrabi, peeled, cut into 5mm-wide sticks
  • 6 green shallots, trimmed, sliced
  • 18.20 gm extra virgin olive oil
  • 1 garlic clove, finely chopped
  • 2 tsp fennel seeds
  • 52.50 gm fresh lemon juice
  • 1 tsp dried oregano leaves
  • Pinch of caster sugar
  • Salt & freshly ground black \tpepper
Instructions:
  • Boil broccoli in a saucepan of water until tender crisp, about 2-3 minutes. Drain and transfer to a serving bowl.
  • Combine the cabbage, kohlrabi, and green shallots with the broccoli, and toss delicately.
  • In a small saucepan, warm oil over gentle heat. Add garlic and fennel seeds, cook and stir for 1 minute until fragrant. Remove from heat, add lemon juice, oregano, sugar, salt, and pepper. Mix until well combined.
  • Drizzle dressing over vegetables and toss well to ensure every bite is packed with flavor. Enjoy right away.
