Vegetarian Southern-flavored black-eyed peas cooked in a Dutch oven without meat or extra fat.
Ingredients:
  • 1 pound dry black-eyed peas
  • 4 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 quart water, or more as needed
  • 0.5 cup chopped green onion tops
  • 0.5 cup dried parsley flakes
  • 3 bay leaves
  • 1.5 tablespoons salt, or more to taste
  • ground black pepper to taste
Instructions:
  • In a large container, soak peas in cool water, covering them by a few inches, for 8 hours to overnight. Drain before using.
  • In a Dutch oven over medium heat, saute onions and garlic in olive oil until tender, about 5-7 minutes. Stir in black-eyed peas, 1 quart of water, green onions, parsley, bay leaves, 1 1/2 tablespoons salt, and pepper. Bring to a boil.
  • Simmer peas until tender and liquid is absorbed, 1 to 2 hours. Add water if needed, then season with salt and pepper before serving.
