Vegetarian butter cauliflower recipe

Quick and easy vegetarian butter cauliflower using our one-pot recipe base, flavorful and perfect with naan bread.
Ingredients:
  • 18.40 gm vegetable oil
  • 1 brown onion, coarsely chopped
  • 44.40 gm tomato paste
  • 180g pkt one pot butter chicken recipe base
  • 500ml (2 cups) Vegetable Liquid Stock
  • 500g cauliflower, cut into small florets
  • 125ml (1/2 cup) thickened cream
  • Steamed basmati rice, to serve
  • Chopped fresh coriander, to serve
  • 4 naan breads, warmed, to serve
Instructions:
  • In a saucepan over medium-high heat, heat the oil until shimmering. Sauté the onion for 4-5 minutes until softened. Stir in the tomato paste and cook for 1-2 minutes until slightly darkened.
  • Pour the flavorful base and stock into the pot and bring it to a lively boil. Add the cauliflower and lower the heat to medium-low. Let it cook partially covered, stirring occasionally, for about 5 minutes until the cauliflower slightly softens. Transfer the cauliflower to a heatproof bowl using a slotted spoon.
  • Pour in the cream into the sauce, increase the heat to high, and bring to a boil. Simmer for 15-20 minutes until the sauce thickens. Stir in the cauliflower until heated through and well coated.
  • Scoop the rice into serving bowls, add the cauliflower mixture on top, sprinkle with coriander, and serve with naan bread.
