Vegetarian Refried Beans

Delicious and low-fat vegetarian refried beans, topped with optional melty Monterey Jack cheese for added flavor.
Ingredients:
  • 1 pound dry pinto beans, rinsed
  • 2 tablespoons minced garlic, divided
  • 1 medium tomato, diced
  • 2 tablespoons ground cumin
  • 1 tablespoon chili powder
  • 2 tablespoons olive oil
  • salt to taste
Instructions:
  • In a large saucepan, submerge the beans with water by 1 inch. Bring to a boil over high heat, then drain and return to the pot.
  • Make sure the beans are submerged under water by 2 inches, then mix in 1 tablespoon each of garlic, tomato, cumin, and chili powder. Boil over high heat, then lower the heat to a simmer until the beans are very soft, for approximately 3 hours and 45 minutes. Add water when necessary.
  • Mash cooked beans with remaining garlic, oil, and salt. Adjust consistency with water as needed. Simmer over low heat for 30 minutes, stirring occasionally.
