Delicious vegetarian stuffing with creamy mushroom soup, earthy mushrooms, crunchy pecans, and tart cranberries steals the show at Thanksgiving.
Ingredients:
  • 1 (1 pound) loaf day-old bread, torn into small pieces
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1 (10.5 ounce) can vegetable broth
  • 2 tablespoons water
  • 1 teaspoon poultry seasoning
  • ground black pepper to taste
  • 0.5 cup wild rice, cooked
  • 0.25 cup dried cranberries
  • 0.5 cup fresh mushrooms
  • 0.5 cup chopped pecans
  • 0.25 cup cubed apples
Instructions:
  • Combine the bread, cream of mushroom soup, vegetable broth, water, poultry seasoning, and season with salt and pepper to your liking. Mix in optional ingredients as desired. Form the mixture into a loaf shape and wrap it in nonstick foil before baking.
  • Bake at 350 degrees F (175 degrees C) for an hour. Slice and serve like meatloaf.
