Vegetarian Tortilla Soup

Satisfy your craving with this quick and flavorful Veggie Tortilla Soup, topped with fresh cilantro. Easy to make, easy to personalize, always delicious!
Ingredients:
  • 1 tablespoon olive or canola oil
  • 4 corn tortillas (5 or 6 inch), cut into 2 x 1/2-inch strips
  • 1 medium onion, chopped (1/2 cup)
  • 1 can (14 oz) reduced-sodium vegetable broth
  • 1 1/2 cups water
  • 1 can (10 oz) chopped tomatoes and green chiles, undrained
  • 1 tablespoon lime juice
  • 1 tablespoon chopped fresh cilantro or parsley
Instructions:
  • Heat 2 teaspoons of oil in a 2-quart nonstick saucepan over medium-high heat. Add tortilla strips and cook for 30 to 60 seconds, stirring occasionally, until they are crisp and light golden brown. Remove from saucepan and drain on paper towels.
  • In the same saucepan, sauté the onion with the remaining 1 teaspoon of oil over medium-high heat until the onion is tender, stirring occasionally.
  • Combine the broth, water, and tomatoes in the pot. Bring to a boil, then reduce the heat and simmer uncovered for 20 minutes.
  • Combine the fresh lime juice into the soup and ladle over crispy tortilla strips. Top it off with a sprinkle of fragrant cilantro leaves for a burst of flavor.
