Mexican-inspired sopa seca: Fried vermicelli pasta in tomato-garlic-onion puree.
Ingredients:
  • 12 ounces vermicelli pasta
  • 2 tablespoons vegetable oil
  • 2 cups water
  • 0.25 yellow onion
  • 2 tomatoes
  • 1 clove garlic
  • salt to taste
Instructions:
  • In a large sauté pan, sauté vermicelli in vegetable oil until nicely golden.
  • Blend water, onion, tomatoes, garlic, and salt until smooth in a food processor or blender. Pass the mixture through a strainer.
  • Pour the blended mixture onto the vermicelli and simmer until all the liquid is absorbed or evaporated.
