Seared pork chops oven-baked in savory maple syrup gravy.
Ingredients:
  • 4 pork chops
  • 2 tablespoons butter or extra virgin olive oil
  • 1/4 cup minced onion, plus 1 medium onion sliced (sliced onion optional)
  • 1 tablespoon apple cider or white vinegar
  • 1 teaspoon chili powder
  • 1/2 teaspoon pepper
  • 1/4 cup maple syrup
  • 1/4 cup water
  • 1-2 tablespoons Worcestershire sauce
  • Salt to taste
  • About 1 tablespoon flour to thicken the gravy
Instructions:
  • Start by preheating your oven to 400°F. Season both sides of the pork chops with a sprinkle of salt. In a large sauté pan over medium-high heat, melt the butter or heat the oil. Blot the pork chops dry with paper towels and carefully place them in the pan. Allow them to cook undisturbed until they develop a beautiful brown crust, then flip and brown the other side. Transfer the browned pork chops to a high-sided baking dish or roasting pan. If your pork chops are thin and fully cooked, you can skip the oven and cover them loosely with foil while preparing the sauce.
  • Prepare the sauce: Sauté the minced onion in the same pan used for browning the pork until it starts to brown, about 2-3 minutes. Stir in vinegar, chili powder, pepper, maple syrup, water, and Worcestershire sauce. Bring the mixture to a boil.
  • Drizzle the sauce over the pork chops in the baking dish. Bake at 350°F uncovered for 10-15 minutes for thick chops or 5-10 minutes for thin chops until the pork reaches an internal temperature of 145°F.
  • If desired, caramelize sliced onions: Heat a little oil in the same sauté pan used for the sauce over medium-high heat. Sauté onions until lightly browned, absorbing any remaining sauce in the pan, while the pork chops bake.
  • To thicken gravy with flour: Transfer the pork chops to a serving platter and cover loosely with foil. Pour the sauce back into the saucepan used to sear the chops. Whisk in 1 tablespoon of flour to thicken the gravy. Season with salt, and drizzle the gravy over the chops and (optional) onions before serving.
