Irresistible Oktoberfest dip made with creamy Camembert, rich cream cheese, roasted garlic, and butter - perfect for dipping pretzels.
Ingredients:
  • 1 head garlic
  • 1 teaspoon olive oil
  • 16 ounces Camembert cheese, rind removed and cheese cut into pieces
  • 2 (8 ounce) packages cream cheese
  • 1 (5 ounce) package grated Parmesan cheese
  • 3 ounces shredded extra-sharp Cheddar cheese
  • 1 cup German-style beer
  • 0.25 cup butter
  • 0.5 cup minced onion
  • 2 teaspoons caraway seeds
  • 0.5 teaspoon paprika
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C) and allow the refrigerated ingredients to come to room temperature alongside.
  • Cut off the top of the garlic bulb to expose the cloves. Drizzle olive oil over the garlic and wrap it in aluminum foil.
  • Roast the garlic in the preheated oven for 35 to 40 minutes until tender. Allow the roasted garlic to cool completely.
  • In a food processor, blend Camembert cheese, cream cheese, Parmesan cheese, Cheddar cheese, beer, and butter until smooth. Add roasted garlic, onion, caraway seeds, and paprika; blend until smooth. The mixture may seem thin but will thicken in the fridge. Transfer to a sealed container and refrigerate for a minimum of 2 hours to meld flavors.
