Delicious sweet and sour coleslaw, a family heirloom recipe from Grandma's cook. Perfect accompaniment for beef brisket, make ahead for optimal flavor. Lasts in fridge for 2 weeks.
Ingredients:
1large headcabbage, cored and shredded
0.75 cupwhite sugar, divided
1cupvegetable oil
1cupwhite vinegar
1tablespoonprepared yellow mustard
1teaspooncelery seed
groundblack pepper to taste
Instructions:
Spread the shredded cabbage in a spacious glass baking dish or any glass container, avoiding metal or plastic. Then, sprinkle evenly with 1/2 cup of white sugar and the salt.
Combine the remaining sugar, oil, vinegar, mustard, celery seed, and pepper in a microwave-safe bowl. Stir to blend in the sugar, then microwave on high until boiling, approximately 3 minutes. Carefully pour the boiling mixture over the cabbage and toss to evenly coat with a wooden or plastic utensil.
Allow to rest on the counter for a few hours, giving it a stir now and then. Cover and chill. Mix well before serving, and dish out using a slotted spoon.
