Victor's Shrimp Fried Quinoa

Turn your stir-fry game up with a quinoa twist!
Ingredients:
2cups chicken broth
1cupquinoa
1tablespooncanola oil
1bunchgreen onions, sliced
1cupcorn kernels
1poundpeeled and deveinedshrimp
1cupthawedfrozen peas
1tablespoonsoy sauce, or to taste
1teaspoontoasted sesame oil
0.5 cupchoppedcilantro
Instructions:
In a saucepan, bring chicken broth to a boil. Add quinoa, cover, and simmer on low heat until all moisture is absorbed, about 18-20 minutes.
As the quinoa steams, warm oil in a skillet over medium heat. Sauté green onions until fragrant, for 1 to 2 minutes. Add corn and cook until lightly toasted on medium-low heat, for about 5 minutes. Then, add shrimp and cook until pink and opaque, about 5 minutes. Finally, mix in peas and heat through for 2 to 3 minutes.
Add the cooked quinoa to the shrimp mixture and heat on medium. Drizzle soy sauce and sesame oil, then cook and stir until piping hot, about 3 to 5 minutes. Remove from heat, sprinkle with cilantro, and serve.
