Quick and easy Vietnamese caramelized coconut shrimp dish.
Ingredients:
  • 1 pound uncooked medium shrimp, peeled and deveined
  • 1 tablespoon salt
  • 2 tablespoons white sugar
  • 0.25 cup coconut water
  • 1 teaspoon maple syrup
  • 2 tablespoons olive oil
  • 1 dash sesame oil
  • 1 shallot, minced
  • 3 cloves garlic, minced
  • 2 tablespoons fish sauce
  • 1 tablespoon chopped fresh chives
Instructions:
  • Clean the shrimp by placing them in a bowl, rinsing with water, draining, and adding salt. Rub the salt into the shrimp thoroughly, rinse well again, and set aside for 15 minutes.
  • In a heavy pot, heat sugar over medium-low heat until melted. When sugar caramelizes, slowly add coconut water, being careful to prevent splattering. Then, pour in maple syrup and stir until smooth. Remove pot from heat and set aside.
  • Heat olive oil and sesame oil in a saute pan over medium heat. Cook shallot and garlic until shallot is soft and translucent, about 5 minutes. Stir in fish sauce and sugar syrup for 1 to 2 minutes.
  • Place the shrimp in the saucepan and cook in the syrup, turning occasionally, until they turn pink and are fully cooked, about 3 to 4 minutes. Sprinkle with chives before serving.
