Ingredients:
  • 1 lemon grass, minced
  • 1 (3 pound) whole chicken, cut into pieces
  • 0.66666668653488 cup water
  • 1 tablespoon fish sauce
  • 1.5 tablespoons curry powder
  • 1 tablespoon cornstarch
  • 1 tablespoon chopped cilantro
Instructions:
  • In a skillet over medium heat, warm vegetable oil. Add lemongrass and cook until fragrant, about 3 to 5 minutes. Add chicken and cook until no longer pink in the center and skin is browned, about 10 minutes. Stir in water, fish sauce, and curry powder. Bring to a boil over high heat, then reduce heat and simmer for 10 to 15 minutes.
  • Combine cornstarch and 2 tablespoons of curry sauce in a small bowl until creamy. Add the cornstarch mixture to the skillet and simmer until the sauce thickens, approximately 5 minutes. Top with fresh cilantro before serving.
