Vincent's Famous Garlic Coleslaw

Garlic coleslaw: Bold, zesty salad inspired by a seafood restaurant, featuring garlic, apple cider vinegar, and celery seeds.
Ingredients:
  • 1 medium head green cabbage, finely shredded
  • 3 tablespoons finely chopped garlic
  • 1.5 teaspoons kosher salt
  • 0.33333334326744 cup grapeseed oil
  • 0.33333334326744 cup mayonnaise
  • 0.33333334326744 cup apple cider vinegar
  • 0.25 teaspoon ground paprika
  • 0.25 teaspoon ground white pepper
  • 0.125 teaspoon white sugar
  • 0.125 teaspoon celery seed
Instructions:
  • Add shredded cabbage to a spacious bowl.
  • Place chopped garlic on a cutting board and sprinkle salt over it. Use the flat side of a chef's knife to smash the garlic and salt together until combined. Transfer this mixture to a bowl. Whisk together grapeseed oil, mayonnaise, apple cider vinegar, paprika, white pepper, sugar, and celery seed with the garlic mixture until the dressing is smooth and uniform.
  • Coat shredded cabbage with dressing, ensuring an even mix. Press coleslaw down in the bowl with a spoon or place another bowl on top. Refrigerate covered for at least 1 hour. Stir well before serving.
