Vincent's Pistachio-Dark Chocolate Chip Cookies

Indulge in rich dark chocolate chip and crunchy pistachio cookies for the perfect sweet and salty treat.
Ingredients:
0.25 cupcrushedpistachios
2.5 cups all-purpose flour
1teaspoonbaking soda
1cupunsalted butter, melted
0.75 cupbrown sugar
0.75 cupwhite sugar
2 large eggs
2teaspoons vanilla extract
1cupcrushedpistachios
0.5 cupdark chocolate chips
Instructions:
Preheat your oven to 350 degrees F (175 degrees C) and prepare 2 baking sheets with parchment paper or silicone baking mats (like Silpat®).
Grind 1/4 cup of pistachios in a food processor until powdered.
Combine the pistachio powder with the flour, baking soda, and salt in a bowl, stirring gently until well mixed.
In a large bowl, blend butter and both sugars using an electric mixer until light and fluffy. Add eggs one at a time, beating well after each addition. Mix in vanilla. Gently fold in flour mixture until just combined, then mix in the remaining 1 cup of crushed pistachios and dark chocolate chips.
Spoon dollops of dough onto the baking sheets, spacing them 3/4 inch apart.
Bake in the preheated oven until edges are slightly crispy, for 10 to 12 minutes. Allow to cool on the baking sheet for 2 to 3 minutes before transferring to a wire rack to cool completely, for an additional 8 to 10 minutes.
