Blend chickpeas in Vitamix for creamy hummus, perfect for parties.
Ingredients:
  • 2 (15 ounce) cans chickpeas
  • 6 tablespoons extra-virgin olive oil, divided
  • 1.5 tablespoons minced garlic
  • 1 lemon
  • 0.33333334326744 cup tahini (sesame seed paste)
  • 1 dash ground cumin, or more to taste
Instructions:
  • Add one can of chickpeas, including its liquid, into a blender. Drain the second can of chickpeas, reserving the liquid. Set the liquid aside and add the chickpeas to the blender.
  • In a small saucepan, warm 1 tablespoon of oil over medium-high heat. Sauté garlic until it begins to turn golden, for about 1 minute. Quickly transfer the garlic and oil from the pan to a blender.
  • Squeeze lemon juice into the blender using a citrus press, ensuring no seeds get in. Then add the rest of the oil, tahini, salt, and cumin.
  • Blend on high speed for 1 to 2 minutes until smooth. Gradually pour in reserved chickpea liquid to reach desired consistency, blending for an additional 2 to 3 minutes. Transfer hummus to a flat serving bowl and spread it evenly in a circular motion to serve.
