Vodka and pomegranate punch

Heavenly vodka pomegranate punch - tart, fruity, and irresistible.
Ingredients:
  • 70g (1/3 cup) caster sugar
  • 2 pomegranates, seeds removed
  • 270ml vodka, plus extra, to rim
  • 500ml (2 cups) pink grapefruit soda
  • Ice cubes
  • Fresh mint sprigs
Instructions:
  • In a large mortar, combine the sugar and 1 teaspoon of pomegranate seeds. Use a pestle to pound until the sugar turns pink, then remove and discard the seeds.
  • Moisten a clean sponge with a small amount of vodka and carefully coat the rims of 6 glasses. Then, dip the moistened rims into the pomegranate sugar for a flavorful finish.
  • Mix together the vodka, grapefruit soda, leftover pomegranate seeds, ice, and fresh mint in a pitcher. Serve the refreshing cocktail in glasses.
