Delicious no-bake Iced VoVo cake recipe - chill overnight for best results.
Ingredients:
  • 300ml double thick cream
  • 250ml (1 cup) thickened cream
  • 80ml (1/3 cup) Malibu rum
  • 210g pkt Iced VoVo biscuits
  • 6.80 gm desiccated coconut
  • 50g white chocolate melts, melted
  • 8.80 gm coconut flakes
  • 100g Fresh Berry Farm Boysenberries In Sauce, crushed
Instructions:
  • Whisk the creams in a large bowl with a balloon whisk until they form almost firm peaks, being careful not to overbeat.
  • In a shallow dish, pour the Malibu. Dip each biscuit in the liqueur for 2 seconds. Spread 2 tsp of cream on the first biscuit. Layer another biscuit dipped in liqueur on top and spread 2 tsp of cream. Repeat with remaining biscuits, liqueur, and cream to create a loaf. Transfer to a serving plate.
  • Cover the loaf with the remaining cream, sprinkle desiccated coconut on top, and loosely cover with plastic wrap before chilling in the fridge for at least 5 hours or overnight to set.
  • Prepare a baking tray lined with parchment paper. Drop small spoonfuls of melted white chocolate onto the tray. Swiftly use the back of a teaspoon to spread the chocolate in one smooth motion. Sprinkle coconut flakes on top. Allow to set over a rolling pin. Repeat with the rest of the white chocolate and coconut flakes.
  • When ready to serve, discard the plastic wrap. Pour the boysenberry sauce over the loaf and garnish with chocolate and coconut shards for a delightful presentation.
