Hearty vegetarian stew with potatoes, beans, cabbage, and carrots in flavorful herb-spiced broth. A must try!
Ingredients:
  • 2 tablespoons butter
  • 1 large yellow onion, chopped
  • 2 bunches leeks, chopped
  • 1 clove elephant garlic, chopped
  • 4 stalks celery, chopped
  • 3 large carrots, chopped
  • 1.5 quarts vegetable broth
  • 1 (29 ounce) can tomato sauce
  • 1 (15 ounce) can black beans
  • 0.5 head Chinese cabbage, cored and shredded
  • 4 large potatoes
  • 1 tablespoon dried oregano
  • 2 teaspoons dried basil
  • 1 teaspoon freshly ground black pepper
  • 0.25 teaspoon celery salt
  • 1 dash ground cayenne pepper
  • 2 bay leaves
  • grated Parmesan cheese to taste
Instructions:
  • Begin by melting the butter in a large pot, then sauté the onion, leeks, and garlic until soft. Add the celery and carrots, followed by the broth, tomato sauce, black beans, cabbage, and potatoes. Season the mixture with oregano, basil, black pepper, celery salt, cayenne pepper, and bay leaves. Bring everything to a boil, then simmer on low heat with the pot covered for 25 minutes, ensuring to stir occasionally until the vegetables are tender. Finish the dish by sprinkling Parmesan on top before serving.
