Waldorf's Sour Cream Cheesecake

Indulgent sour cream cheesecake on a vanilla wafer crust, perfect for celebrations and festivities.
Ingredients:
  • 7 ounces vanilla wafers, crushed
  • 0.5 cup margarine, melted
  • 2 tablespoons white sugar
  • 1 pinch ground cinnamon
  • 2 (8 ounce) packages cream cheese, softened
  • 1 (3 ounce) package cream cheese, softened
  • 1 cup white sugar
  • 2 tablespoons lemon juice
  • 4 eggs
  • 1 pint sour cream
Instructions:
  • Preheat your oven to 375°F (190°C) for the perfect cooking temperature.
  • Combine vanilla wafers, margarine, 2 tablespoons of sugar, and cinnamon in a bowl, then firmly press the mixture into the bottom of a 9x13-inch baking dish.
  • Bake in the oven until golden brown, approximately 10 minutes.
  • Combine the two 8-ounce packages and 3-ounce package of cream cheese with 1 cup of sugar and lemon juice until creamy. Add eggs one at a time, mixing well after each addition, then spread the mixture over the crust.
  • Bake in the heated oven until the center of the cheesecake is firm, for about 25 to 30 minutes. Allow it to cool for 10 minutes before serving.
  • Preheat oven to 475°F (245°C).
  • Combine sour cream, 2 tablespoons of white sugar, and vanilla extract in a bowl. Mix until smooth and then drizzle over the cheesecake.
  • Bake for about 5 minutes until the topping is set. Allow the cheesecake to cool to room temperature, then refrigerate until ready to serve.
