Waldorf salad

Elevate this simple salad with a delicious mix of flavors.
Ingredients:
  • 1 lemon
  • 150 g grapes (on the stalk if possible)
  • 60 g shelled walnuts
  • 1 teaspoon English mustard
  • 250 ml fat-free natural yoghurt
  • 6 sprigs of fresh tarragon
  • 2 sticks of celery
  • 2 crisp eating apples such as Braeburn or Cox
  • 1 cos or Romaine lettuce
Instructions:
  • Preheat the oven to 180°C/350°F/gas 4. Spread grapes on a baking tray, zest half a lemon over them, drizzle with oil, season with salt and pepper. Roast in the oven for 15 minutes, then add walnuts and roast for an additional 5-10 minutes until grapes are caramelized and walnuts are golden. In a bowl, whisk together mustard and yogurt, add chopped tarragon, lemon juice, season to taste. Chop celery, slice apple, and tear lettuce, then mix with grapes. Toss with yogurt dressing, transfer to a platter, sprinkle with chopped walnuts, and serve.
