Irresistibly delicious snack sensation.
Ingredients:
  • 1 lb (80/20) ground beef chuck
  • 2 cups finely chopped white onion (from 1 large white onion), divided
  • 1 tsp. kosher salt
  • 1 (15 oz) can pinto beans, rinsed and drained
  • 1 (1 oz) pkg. taco seasoning or 2 Tbsp. Homemade Taco Seasoning
  • 1/2 cup salsa
  • 8 (3.5 oz) bags corn chips (such as Fritos)
  • 2 cups finely shredded romaine lettuce
  • 8 oz Monterey Jack cheese, shredded (about 2 cups)
  • 1 cup chopped seeded tomato (from 1 large tomato)
  • 1/2 cup tender cilantro stems and leaves
  • 1/2 cup sour cream
  • Pickled jalapeño and hot sauce, for garnish
Instructions:
  • To make the beef and beans topping, start by heating a large nonstick skillet over medium-high heat. Cook the ground beef with half of the chopped onions and salt, stirring occasionally until the onions are soft and the beef is cooked through, approximately 5 minutes. Consider skimming excess fat if desired. Reduce the heat to medium-low and stir in the pinto beans, taco seasoning, and salsa. Cook until the beans are warmed through, about 2 minutes. Once done, remove the skillet from the heat.
  • Prepare Walking Tacos: Cut the top off or down the center front of each chip bag using scissors. Fill each bag with 1/2 cup of beef, 1/4 cup lettuce, 1/4 cup cheese, 2 tablespoons tomato, 1 tablespoon chopped onions, 1 tablespoon cilantro, and 1 tablespoon sour cream.
