Walnut Cheesecake Cookies

Classic Christmas cookie, deliciously worth the effort. Butter melts in your mouth.
Ingredients:
  • 0.5 cup butter, softened
  • 1 (3 ounce) package cream cheese
  • 1 egg, separated
  • 1 teaspoon lemon zest
  • 1 cup sifted confectioners' sugar
  • 1 cup sifted all-purpose flour
  • 1 cup finely chopped walnuts
  • 0.25 cup apricot preserves
Instructions:
  • In a mixing bowl, beat together butter, cream cheese, egg yolk, vanilla, lemon peel, and salt until light and fluffy. Slowly add confectioners' sugar, followed by flour, until a stiff dough forms.
  • Refrigerate the dough for 2 hours.
  • Preheat oven to 325°F (165°C) for the perfect cooking temperature.
  • Roll the dough into 30 one-inch balls.
  • Whisk egg white until frothy. Coat balls with egg white and coat with chopped nuts. Place 2 inches apart on ungreased baking sheet and press down the center of each with your thumb.
  • Bake for 12-15 minutes until cookies start browning on the bottom. Transfer to a wire rack and while still warm, fill each well with 1/2 teaspoon of apricot preserves or your favorite jam.
