Warm beetroot and lentil salad

Savor this refreshing lentil salad, perfect for a family BBQ side dish.
Ingredients:
  • 56.88 gm olive oil
  • 1 red onion, chopped
  • 2 garlic cloves, crushed
  • 2 x 400g cans brown lentils, drained, rinsed
  • 450g can beetroot wedges, drained
  • 20.00 ml red wine vinegar
  • 80g baby rocket leaves
  • 180g feta cheese, cut into cubes
Instructions:
  • Heat a tablespoon of oil in a pan over medium heat. Sauté the onion until softened, about 2 minutes. Then add garlic, lentils, and beetroot, and cook for an additional minute.
  • In a bowl, combine the remaining oil, vinegar, salt, and pepper. Pour over the lentils and mix well to coat.
  • Gently mix rocket, feta, and lentils in a bowl. Serve fresh and enjoy.
