Warm chicken and soba noodle salad

Make quick and healthy chicken soba noodle salad for the family. Ready in under 30 minutes.
Ingredients:
  • 200g chicken breast fillets, trimmed
  • 180g soba noodles (2/3 of packet)
  • 200g snow peas, trimmed, halved diagonally
  • 200g packet Japanese teriyaki tofu, cut into 2cm cubes
  • 3 green onions, thinly sliced
  • 6.00 gm sesame seeds, toasted
  • 30.00 ml mirin (Japanese rice wine)
  • 30.00 ml rice wine vinegar
  • 21.00 gm soy sauce
  • 4.00 gm brown sugar
  • 1 tsp sesame oil
Instructions:
  • Place the chicken in a saucepan and cover it with cold water. Bring it to a boil over high heat, then reduce the heat and simmer for 4 minutes until almost cooked through. Remove from heat, cover, and let it stand for 10 minutes. Finally, transfer the chicken to a chopping board and shred.
  • Cook noodles and snow peas in a pot of boiling salted water for 3 to 4 minutes until tender. Drain and transfer to a large heatproof bowl.
  • Prepare the dressing by combining all ingredients in a small bowl and whisking with a fork.
  • Combine the chicken, tofu, green onion, and dressing with the noodle mixture, tossing everything together until well mixed. Finish by sprinkling sesame seeds on top before serving.
