Warm eggplant and chickpea salsa

Make a delicious chunky eggplant salsa to pair with any meal.
Ingredients:
  • 36.40 gm olive oil
  • 2 tsp ground turmeric
  • 1 tsp cumin seeds
  • 400g can chickpeas, drained, rinsed
  • 155g eggplant
  • fresh coriander leaves, to serve
Instructions:
  • In a non-stick frying pan over medium heat, sizzle oil, turmeric, and cumin seeds until fragrant, stirring occasionally for about 2 minutes.
  • Toss in chickpeas and eggplant. Saute briefly until chickpeas are heated. Season with salt and pepper. Serve and enjoy!
