Thai-inspired kale salad with ginger, garlic, lime dressing, topped with peanuts and mint.
Ingredients:
  • 2 tablespoons olive oil
  • 0.5 red onion, thinly sliced
  • 5 cloves garlic, minced
  • 1 tablespoon minced fresh ginger root
  • 2 teaspoons red pepper flakes
  • 4 carrots, thinly sliced
  • 3 stalks celery, thinly sliced
  • 8 leaves kale, stemmed and torn into pieces
  • 5 sprigs fresh cilantro, roughly chopped
  • 1 lime, juiced
  • 2 teaspoons fish sauce
  • 0.5 teaspoon lime zest, or to taste
  • 1 small cucumber, cut into matchstick-size pieces
  • 0.25 cup roasted peanuts
  • 4 sprigs fresh mint, roughly chopped
Instructions:
  • Preheat a heavy-bottom skillet over medium heat; swirl in olive oil. Sauté onion until softened, about 3-4 minutes. Add garlic, ginger, and red pepper flakes; cook until fragrant and slightly browned, around 1 minute.
  • Combine carrots and celery with the fragrant onion mixture, sauté and stir for 1 minute. Introduce kale and fresh cilantro, sauté briefly until kale starts to soften, approximately 45 seconds. Finish by mixing in lime juice, fish sauce, and lime zest until the kale is fully dressed in tangy lime goodness.
  • Present a vibrant kale salad garnished with crisp cucumber, crunchy peanuts, and fragrant mint leaves.
