8 pitted large ripe or green olives, cut in half lengthwise
Instructions:
Preheat the oven to 375°F and spray a cookie sheet with cooking spray. Place 2 tortillas on the prepared cookie sheet. Spread half of the barbeque sauce with pork over each tortilla. Sprinkle half of the pickle relish over each. Add 1/4 cup of cheese on top of each tortilla and cover with the remaining tortillas. Lightly spray the tops with cooking spray.
Bake until tortillas are golden brown and filling is heated through, about 10-12 minutes.
Take out the partially baked quesadillas from the oven and sprinkle 1 teaspoon of cheese in 8 evenly spaced piles along the edges of each quesadilla. Place 1 olive half on top of each cheese pile to create a wart-like appearance.
Place back in the oven and bake for an additional minute, or until the cheese is melted. Allow it to sit for 5 minutes before serving. Cut each quesadilla into 8 wedges.
