Watercress, crispy bacon and walnut salad

Delicious 5-ingredient salad ready in under 30 minutes.
Ingredients:
  • 1 bunch watercress, trimmed, cut into small sprigs, chilled
  • 250g rindless bacon
  • 36.40 gm extra virgin olive oil
  • 100g walnut pieces
Instructions:
  • Prepare a bowl with refreshing ice-cold water and immerse the watercress in it. Allow it to soak for 5 minutes.
  • 1. Preheat a non-stick frying pan over medium-high heat, then add bacon slices. Cook for 2 to 3 minutes per side until crispy. Drain on paper towels, chop roughly, and transfer to a large bowl.
  • Heat oil in a frying pan until hot. Add walnuts and cook, stirring often, until toasted. Remove from heat and mix in lemon juice, salt, and pepper.
  • After draining watercress, gently pat-dry with paper towels, then add it to the bacon. Pour the walnut mixture over the watercress and bacon, gently toss to combine, and serve.
