Elevate your summer salads with fresh watercress for a zesty twist. A delightful blend of textures and sweet tanginess for the perfect seasonal side.
Ingredients:
  • 80ml (1/3 cup) rice wine vinegar
  • 30.00 gm caster sugar
  • 1 bunch radishes, thinly sliced
  • 1 bunch watercress, sprigs picked
  • 1 green apple, thinly sliced
Instructions:
  • Combine vinegar and sugar in a saucepan over medium heat, stirring for 2 minutes until sugar dissolves. Bring to a boil, then simmer for 2 minutes until slightly reduced.
  • Transfer the radish to a petite heatproof bowl and generously drizzle with the vinegar mixture. Allow it to rest for 30 minutes to reach a delightful chill. Then, strain the radish, saving 2 tablespoons of the flavorful vinegar mixture.
  • Combine watercress, apple, radish, and reserved vinegar mixture in a large bowl, gently tossing to mix.
