Watermelon Rind Preserves

Pickled watermelon rind infused with zesty lemon and spices.
Ingredients:
  • 4 pounds chopped watermelon rind
  • 1 gallon water
  • 0.5 cup salt
  • 9 cups white sugar
  • 8 cups water
  • 4 teaspoons crushed cinnamon stick
  • 4 teaspoons ground cloves
  • 4 lemons - rinsed, sliced and seeded
  • 1 dash red food coloring
Instructions:
  • Remove the green part of the watermelon rind and cut into 2-inch pieces. Soak the rind in a mixture of 1 gallon of water and 1/2 cup of salt overnight to enhance flavor.
  • Remove the rind from the salted water and transfer it to a stockpot. Cover with clean water and bring to a boil over medium-high heat. Simmer for roughly 30 minutes until the rind is tender, then drain.
  • Combine sugar, 8 cups water, sliced lemons, cinnamon, and cloves in a large pot. Boil for 5 minutes. Add lemon rinds and cook until transparent. Remove spice bag, stir in red food coloring if desired. Ladle the preserves into hot sterile jars and seal by processing.
